Okay to be perfectly honest sometimes when people ask my what my blog is called, I get embarrassed to tell them Barefoot Blonde!! Ahhh so silly I know and I dont know why but because it kind of sounds little kiddish and its usually when successful adults are asking me I feel silly because of the fact that it sounds somewhat cheesy and young. No body knows that I made it when I was 18, but the truth of the matter is, I’m almost ALWAYS barefoot! (Obviously not outside in the cold weather, although it’s been known to happen.) But here I am again, true to form, barefoot… in the kitchen. I wanted to show you guys a few of my favorite yummy healthy, quick and easy snack ideas. We always stock a good supply of the ingredients for these because I love them so much, and as you know from my Blue Apron posts, the easier the better is always my motto:) I am a total snacker and have to have snacks in between meals (and perhaps in the middle of the night? errr..) Anyhow, this is going to be just the beginning of a series of videos I do on health and fitness. I hope you enjoy it as much as I do these yummy snacks!

This first one is slices of cucumbers with hummus and turkey!! It is sooooo dang good and I could eat 10 million a day. You have to watch the video to see the other four! 😉

  1. I’m just now getting around to making the cucumber bites! I’ve been hanging on to this forever and finally got around to it. YUM – thanks, Amber!

  2. I love your blog, its fashionable and on pointe without being pretentious! And I think your name is sweet, but in my head I always think of “braided blonde” when I think of your blog… keep on being you!!

  3. thank you so much for this post. these ALL look amazing. I made both the bean salad and the granola tonight so I can have them for breakfast and lunches during my super busy week (working overtime for tax season!) Now if I could only find that brownie brittle, my life would be complete……

  4. Hey Amber!
What a beautiful blog! May I ask what kind of nail polish you’re ‘wearing’ in these pics?
    Thanks! x D

  5. Munching hummus and cucumbers while writing 🙂 I always have to smile when looking at your photos with sweet Atticus. I have a Girl 10months, and she is also always friendly and my sunshine. Love your Blog, especially the hair tutorials. I have long Hair too ans i am always looking for alternatives to the baby-friendly-but-boring-mum-bun 🙂 Greetings from Austria!

  6. this is great, the other day i was trying to figure out great snacks to keep on hand that are healthy too, so this came at a great time! i love a good bean salad, and the cucumber mini sandwiches are perfect! thanks for posting! (and i think the name of your blog is great!)

  7. For the record I like the name. It doesn’t sound childish to me. It sounds casual and your blog is very casual and open about your opinions and thoughts on life, so it fits perfectly.

  8. Hi! i follow you on instagram and youtube from Italy 🙂 You and your family are beautiful! Can i ask you which camera do you use to take pictures? Thank you, have a good day!

  10. Great post!! I am now inspired to try to make my own almond milk soon (:

  11. For what it’s worth I love your website name! I remember when I found your blog years ago I loved it and the name made me think of being pretty and care free 🙂

Also love these snacks!I’m addicted to the brownie brittle too. Yum.

  12. Love this post!! Everything looks so yummy! Keep them coming! Oh, And I am very impressed that you make your own granola and almond milk! Love it! 🙂

  13. Hi Amber! I am definitely going to try these snacks out; I’ve heard of the cucumber and turkey concoction but I’ve been kind of afraid because it’s bread-less haha!…….. And how you feel about your blog name is how I feel about my personal e-mail 😉

  14. Hey Amber, I need to tell you right now that you are a HUGE inspiration to me and an amazing role model and idol for those parts of life you share on this blog. I can’t really put it into words but thank you for inspiring me so much and sparking up a fire of motivation and vision. This does not only refer to this one post in particular, but more so to your work as a whole.
Your videos and posts are great and the concept of your blog as well as the fact that you’re not a sleek, “ice cold” fashion blogger, but a living, feeling person just like all of us (obviously, yes, but I mean I can see it and read it and relate to it, that’s the point). Maybe it’s the fact that I’m kind of a little bit like you and I want to be more like you in terms of how you bring out the best sides of yourself and all your beauty for the world to see… because I think this is an amazing thing. There is beauty in all of us – in me, too, but sometimes it takes blogs like yours to remind me that I could bring out all my beauty for the rest of the world to see, too, just like you demonstrate it. It’s that glowing example of self-love and care that makes your work valuable for this world!

  15. Hi!
I bought the Coral Bliss Mac lipcolor but it looks more coral than burgundy like your photo, do you have a lip liner with it???

  16. I have enjoyed reading your blog over the last year especially your candid stories! This is the first video I have watched and the first time hearing your actual voice. You sound even sweeter in person! Great video and snack ideas.

  17. These snacks all look delicious! I love varying my snack options so I don’t get bored eating healthy. Thanks for the inspiration!

  18. Hi Amber! This is such a great video. These are all snacks I’ve never seen done before, especially that bean salad I can’t wait to try it. I would love to see maybe what your workout schedule looks like, as well as what would be a normal eating day for you. (Meals from breakfast to dinner) That may sound funny, but I think it would be a great way to show exactly how you stay thin and fit! You and David are both so fit, it would be great getting some tips. Hope you have a wonderfully blessed day, thanks for posting… And you look flawless like always!

  19. I loved this post and love these snack ideas 🙂 I did have one extra question…. did you have any other really good pregnancy healthy snacks that you ate while preggers? I feel like with a few things being left out and needing to eat EVEN more than I already did before, I’m always looking for new fun snacks during this time! Just thought I’d ask!

  20. I have no idea if this will make you feel better or not, but I am seriously in LOVE with your blog name! Your blog was one of the first I came across when I entered the blogging world (it was Jessica Magalei who told me about you!) And I pretty much died a little and went to heaven when I found your blog because it was so cute! (Not to mention that I have long blonde hair and am always barefoot, so even though we have never met I feel like that makes us friends or something…I know, I am a dork!) When I decided to do my own blog I just chose a name that I thought “fit” it at the time, and now when people ask about it sometimes I get embarrassed too, even though I know I shouldn’t because it is my job and I love it…so I definitely understand that feeling! But trust me, your blog name is seriously THEE cutest name ever. I love it. Ok, ending the rant on loving your blog name…. I love this post, I love finding tasty ideas for healthy snacks! Thank you for sharing!

  21. Looks yummy, would you minds posting the size you bought in the sweater? I think XS?

  22. I just made the corn + bean salad, it rocks!! Totally gonna make this all the time now, thanks for the healthy eating inspo! Looking forward to more posts like this 🙂

I´ve been following your blog & instagram for some time already – I LOVE IT!!!

Your unique beauty & style is something I really admire, as well as the way you created your blog. It´s engaging, entertaining and full of great inspirations.

Thank you for this video you made about healthy snacks. On my route to a more healthy lifestyle, I have become conscious about the essential part nutrition plays in our life.

THANK YOU SOOO MUCH for sharing these wonderful recipes. I´m glad they are easy to make too 🙂

    All the best,

    Amsterdam, NL

  24. I can almost taste the Brownie Brittle dunked in the almond milk!! Yum! I am going to try the making the granola to bring on my upcoming vacation! A little container of it would be perfect for airport/airplane snacking and so much better for me than the pre-made, overpriced, airport food. Thank you for sharing!

    1. Ok, so I know your question was for amber but as I scrolled through I saw this and am actually from the salt lake city area myself- so I thought I would pass along that I have found Brownie Brittle at both Walmart and Target, so if you have one of those around where you live you should be able to find it there! Just in the snacks/cracker/cookie section 🙂 Hope this helps!

  25. Thanks for sharing your yummy snack secrets! In my house we make the mozzarella with tomato but I can’t wait to try the rest!

    Xoxo, Isa ♡

  26. OMG, this looks awesome. Thank you for these awesome ideas. I am definitely going to make them all. Please post more on healthy living 🙂

  27. LOVED this post!! I didn’t realize it was that easy to make almond milk. I’m defiantly going to have to try this. Defiantly so much cleaner than store bought. Do you just eyeball the amount of almonds you use?

  28. Amber! I’m sure this is the 739363845x you’ve been asked this but what camera/lens are you guys using?

  29. I’m always barefoot too, lol! Great healthy snack options. Your kitchen is beautiful – can you give us a video tour sometime via insta or snapchat? I know we’re all dying to see it!

  30. This is how I eat tomatoes too!!! My husband thinks I’m weird haha.
I also like adding arugula in between the tomato and cheese

    1. Oh my gosh I LOVE arugula! I do the same thing. Crazy that it took me so long to discover how great it is, but yes I love it too!

    1. Thanks girl, glad to hear you like it! You actually can’t use Latisse while pregnant or nursing so I had to stop, so most of the time I go natural. But a lot of the time I put on fake lashes for my YouTube tutorials. Hope this helps!

    1. You should it’s so yummy and so easy! I love it because you can really just play with the recipe and do what you want. Add different nuts, dry fruits, different kinds of sweeteners. It’s so good!

  31. That pose with the cucumbers was just so cute. You look so happy to be with your favourite snack! 🙂
I need to try that bean salad – we have so many cans of beans in the pantry, so it’s the perfect opportunity!

    Monica – Mocha and Moccasins

    1. I know it really is so good, and I normally don’t love canned beans in the first place but we always have them for this salad! Try it!

    1. Yeah I am such a big snacker, I honestly lose sleep when I think about snacking so I have to have healthy ones on hand:)

  32. YES I am so glad you’re going to be posting about health & food & fitness! I am really trying to learn as much as I can & get healthy – so far, I have long lists of what NOT to do, but no real good ideas / grocery lists / good to dos! 🙂 Thanks!

    1. Of course! I’m glad you liked it, I plan on doing a lot more health and fitness videos/posts so stay tuned!

  33. Thank you so much for sharing this! There are so many great ideas here – I definitely want to try the bean salad and the turkey hummus cucumber bites! I’ve never had/heard of champagne dressing but I looked it up and now REALLY hope I can find it in our stores! It sounds delicious!

    1. I know I hadn’t heard of it either till David’s sister told me about it. It is so tasty! But yes try them all, you won’t regret it!

    1. Well thank you! It looks like we both have care free blog names:) Glad you liked the post!

  34. Oh man, you have no idea how much I love cucumbers and humus! I’ve never tried them with turkey since I literally will sit on the couch and dip cucumbers in humus like they are chips and dip. So so good!
